Preheat oven to 350˚F.
Heat oil in a large skillet and add shallots. Sauté lightly. Remove from heat and arrange on bottom of crust.
Add spinach to skillet and wilt. Remove excess liquid if desired and add to shallots.
Arrange sun-dried tomatoes on top of shallots and spinach. Add crumbled feta.
In a mixing bowl whisk eggs. Add crême fraîche, milk, sage and salt and pepper and mix well.
Pour egg mixture over the rest of the ingredients.
Bake at 350˚F for 30 to 35 minutes or until quiche is set.
